simple venison burger

Ingredients (makes 12)

700g venison mince
500g pork mince
1 large diced onion
Chives, finely chopped
Cumin seeds
Fennel seeds
Chilli flakes
1 tbs harissa paste

Slices of mature cheddar

Dead simple venison recipe – mix everything together and shape into
burgers. Cook under the grill or on the BBQ. Place a slice
of cheddar cheese on top for the last 5 minutes of cooking.

Serve with salad and a simple coleslaw by mixing together
shredded cabbage, carrots, celeriac and mayonnaise.
